Marquette – The first Advanced Topics in Brewing class will cover recipe formulation on Wednesday, May 1 at 6 p.m. in the conference room at Marquette Food Co-op on Baraga Avenue in Marquette.
The class will focus on formulation from mash schedule and grain and hop bills, to water chemistry, fermentation schedule and adjunct selection. Participants should be familiar with all grain brewing processes, but those working with partial mashes should be able to follow along just fine.
Taught by Siebel Institute of Technology graduate Kevin Clegg, this class will help you get away from the formulaic recipes you’ve always used. Start to add personal touches to classic styles or create brand new flavors from completely original recipes. Additional classes will likely follow with topics determined by student interest.
